Three ways to learn / 01

Choose what calls to you.

The places and cultural discoveries are shared across all three journeys. Your main hands-on experience is yours to choose — one dedicated workshop, not three squeezed into the same day.

Your eight days / 02

The art of sushi

Learn the craft behind a meal you can make again at home.

Tokyo to Kyoto, with your chosen workshop on day seven. Ask for a quote and the latest details on dates and availability.

01

Tokyo

A gentle beginning

Arrive in Tokyo and settle in. Meet your fellow travelers, share a first meal if the group wishes, and leave time to recover from the journey.

02

Tokyo

Old streets, new perspectives

Explore the quieter grounds of Meiji Jingu and the streets around Asakusa with a local perspective. Notice how everyday rituals and contemporary city life sit side by side.

03

Tokyo → Tsumago

Walking through another era

Travel by rail toward the Kiso Valley. Discover Tsumago’s preserved streets and the story of the old Nakasendo route, with a short, adaptable walk before an evening in the area.

04

Tsumago → Kanazawa

The lives behind the walls

Continue to Kanazawa. Walk the Nagamachi district and learn how its samurai households lived, then pause in a garden or teahouse to let the stories settle.

05

Kanazawa

A city of makers

Spend the day among Kanazawa’s craft traditions and historic streets. Meet local makers where possible and look closely at the patience and materials behind the work.

06

Kanazawa → Kyoto

Kyoto, at your own pace

Travel onward to Kyoto. Explore temple grounds and the historic streets of Gion with space for rest, reflection and conversation along the way.

07

Kyoto

From rice to the final piece

The main workshop

In Kyoto, visit a food market to look at seasonal ingredients, then learn with a local cook how to season rice and shape sushi by hand. Enjoy what you make and take notes for the kitchen back home. Ingredient handling can be adapted to the group’s preferences.

08

Kyoto

What stays with you

Enjoy a slow final morning before departing from Kyoto. Take home what you practiced, the stories you heard, and a fresh way of seeing Japan.

What stays with you

A practiced recipe, a closer understanding of Japanese food culture, and the confidence to share it.
